Ingredients

- 1 small onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 8 ounces boneless skinless chicken breast
- 6 cups low-sodium chicken broth
- 3/4 cup white rice
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
