Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 8 ounces boneless skinless chicken breast
  • 6 cups low-sodium chicken broth
  • 3/4 cup white rice
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
