One Pot Lemon Chicken Orzo
A light one-pot dinner with tender chicken, orzo, and a fresh lemon finish.

Ingredients
- 1 teaspoon olive oil
- 1 pound boneless skinless chicken breast, diced
- 1 small zucchini, diced
- 1 cup dry orzo
- 2 1/2 cups low-sodium chicken broth
- 1 tablespoon lemon juice
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt

Heat oil in a large pot and cook chicken for 4 to 5 minutes.
