Simple Potato Leek Soup
A lighter take on potato leek soup without cream, blended until silky.

Ingredients

- 2 leeks, sliced
- 3 Yukon gold potatoes, peeled and diced
- 4 cups low-sodium vegetable broth
- 1/2 cup low-fat milk
