Soft Egg Potato Salad
A lighter potato salad with eggs and yogurt dressing instead of mayo.

Ingredients
- 3 small Yukon gold potatoes, diced
- 3 eggs
- 1/4 cup nonfat Greek yogurt
- 1 teaspoon Dijon mustard
- 1 tablespoon chopped chives
- 1/4 teaspoon salt

Boil potatoes until tender and drain.
