Soft Egg Potato Salad

A lighter potato salad with eggs and yogurt dressing instead of mayo.

Ingredients

  • 3 small Yukon gold potatoes, diced
  • 3 eggs
  • 1/4 cup nonfat Greek yogurt
  • 1 teaspoon Dijon mustard
  • 1 tablespoon chopped chives
  • 1/4 teaspoon salt

Instructions

    Boil potatoes until tender and drain.

    Boil eggs, peel, and chop.

    Mix yogurt, mustard, chives, and salt.
